I presume the choice of AUs were determined by whatever's prevalent in the fandoms the creator is/was into. I have come across Spies!AUs some fandoms, but, thinking about it, Cops!AU is probably more common in general, so different profession might be a more inclusive choice. The lack of a Historical AU is an excellet point.
